Chicken and Mango Skewer

Required ingredients:

  • 2 x Chicken Breast
  • Green and Red Peppers
  • 1 x Large Onion
  • 1 x Mango
  • 1 x Mixed lettuce (Optional)
  • Approx 20 x Plum Tomatoes

1. Cut the vegetables into 2.5cm (1") pieces
2. Cut the Chicken breast 2.5cm (1") pieces
3. Mix the cut pieces in a bowl with some mixed herbs & a little Olive Oil
4. Peel and chop the mango "remembering these have a big stone in the middle"
5. Liquidise the Mango and add to the bowl of marinating chicken, Onions and Peppers
6. Thread pieces in turn onto the Skewer "I like to start and finish with a tomato"
7. Place on barbeque, turning occasionally "make sure the chicken is cooked thoroughly"
8. Serve on it’s own or on a bed of mixed lettuce © Upshot Media Ltd
